Serves 2.
6 oz pasta of your choice
1 tbsp olive oil
1 onion roughly chopped
1 clove garlic chopped finely
300ml evaporated milk
1 tbsp flour
1 tsp English mustard
1 tsp thyme
Handful of broccoli florets
I small diced red pepper
1 handful of mange tout sliced into inch sized pieces
100g cooked king prawns
Handful of grated cheddar cheese
1) bring a large pan of water to the boil and add the pasta and the broccoli florets and cook for 10-12 mins until the pasta is al dente.
2) whilst the pasta is cooking, heat the oil in a large pan and gently fry the onion and garlic until softened.
3) remove from the heat and stir in the flour with a small amount of the milk and mustard to form a paste. Return to a low heat and stir in the milk in small amounts stirring constantly to make sure there are no lumps.
4) when all of the milk has been added, add the thyme and stir well, bring to a simmer and add the red pepper and mange tout.
5) simmer gently for 5 mins, then just before serving add the prawns and cheese, stir until the cheese has melted and the prawns warmed through.
6) drain the pasta well, divide into bowls and top with the cheesy sauce.

Chicken Lasagne
- 1 tbsp olive oil
- 2 chicken fillets
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- ½ tsp dried oregano
- 1 tbsp chilli oil
- 1 tbsp tomato purée
- 400g tin chopped tomatoes
- 4 lasagne sheets
- 1/2 courgette cubed
- 6 baby corn sliced
- Handful of Spinach
For the cheese sauce
- 20g butter
- 20g plain flour
- 200ml semi-skimmed milk
- 80g Cheddar, grated
- ½ tsp English mustard.
Method
1)Preheat the oven to gas 6, 200°C, fan 180°C. Heat the oil in a frying pan. Add the chicken and brown. Set aside in a bowl
2)Add the onion and garlic to the pan; cook for 5 mins, or until softened. Stir in the oregano, chilli, tomato purée, courgette, baby corn and tomatoes, then return the chicken with any juices; season. Bring to the boil, then simmer for 5 mins. Add in the spinach until wilted.
3)For the sauce, melt the butter in a pan, then stir in the flour; cook for 1 min. Gradually add the milk. Bring to the boil, then simmer, stirring, for 5 mins. Remove from the heat. Stir in 60g cheese and the mustard; season.
4)Spoon half the chicken mixture into a small baking dish. Top with 2 lasagne sheets, then the remaining chicken. Top with the last 2 lasagne sheets. Pour over the sauce and scatter over the remaining cheese. Bake for 20 mins, or until golden.

Apple Crumble 🍎 🍏
- 3 medium apples, peeled, cored and sliced to 1 cm thick
- 2 tbsp golden caster sugar
- 175g plain flour
- 110g golden caster sugar
- 110g butter
- 1 tbsp rolled oats
- 1 tbsp brown sugar
- 1) Heat the oven to 190C/170 fan/gas 5.
- 2) Toss 575g the apples with 2 tbsp golden caster sugar and put in a baking dish at least 5cm deep. Flatten down with the back of a spoon to prevent too much crumble falling through.
- 4) Put the flour and caster sugar in a food processor with a good pinch of salt and 1 tsp of cinnamon.
- 5) Slice in the butter and pulse until sandy (don’t over-process).
- 6) Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out then gently press the surface with the back of the fork so the crumble holds together.
- 7) Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly.
- 8) Pop on a baking tray and put in the oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.

Baked trout
2 whole rainbow trout, heads and tails removed
1 onion finely sliced
1 tsp thyme
Salt & pepper
Lemon slices
Olive oil
- Preheat oven to 200 C / Gas 6. Grease a baking dish with about 1 teaspoon olive oil.
- Place trout in the prepared baking dish and coat with more olive oil. Season the inside and outside of fish with thyme and salt. Stuff each fish with onion slices; grind pepper over the top. Place 1 lemon slice on each fish.
- Bake in the preheated oven for 10 minutes; add water to dish. Continue baking until fish flake easily with a fork, about 10 minutes more.

Apple Loaf 🍏🍎
- 115g Self Raising Flour
- 115g butter
- 50g light brown sugar
- 50g dark brown sugar
- 2 eggs
- 2 peeled apple chopped into small pieces
- 1tsp of cinnamon
- 1) Preheat the oven to 150. Cream the butter with the sugar with an electric whisk for at least 2 mins
- 2) Whisk in the 2 eggs
- 3) Sieve the flour and cinnamon and ginger into the mixture and fold in. Add the chopped apple by folding in too
- 4) Place in a greased loaf tin and bake for 40 mins. Put a skewer in the middle of cake to see if it comes out clean. If not cooked give it 5 mins longer
Apple Chutney
1.5 kg cooking apples, peeled and diced
750g light muscovado sugar
500g raisins
2 medium onions, finely chopped
2 tsp mustard seeds
2 tsp ground ginger
1 tsp salt
Method
- Combine all the ingredients in a large, heavy saucepan. Bring the mixture to a boil over a medium heat, then simmer uncovered, stirring frequently, for 30-40 mins, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilised, clean, dry jars and seal.
